Olive Garden Salad and Dressing Copycat Recipe

While I love the pasta at Olive Garden, I adore the unlimited Salad and bread sticks. I could eat these everyday and forgo the pasta.  Want to make a copycat version at home?  I experimented with several different versions, including a recipe found at CopyKat.com for delicious results. I did some slight adjustments and changed a couple of ingredients and the dressing was a huge hit. 

Salad Ingredients:
1 (12 ounce) package of bagged Salad Mix with lettuce and carrots
1 small red onion, chopped into slices
1 medium sized Roma tomato, sliced
8 black olives
5 Pepperoncini peppers
1/2 cup croutons
2 Tablespoons freshly grated parmeson cheese

Dressing Ingredients:

1/2 cup mayonnaise

  • 1/3 cup white vinegar
  • 1 teaspoons vegetable oil
  • 2 tablespoons corn syrup
  • 4 tablespoons Parmesan cheese
  • 2 teaspoons minced garlic
  • 1  teaspoon Italian seasoning
  • 4 Tablespoons minced fresh parsley
  • 1 tablespoon lemon juice
  • 2 Tablespoons sugar
To make salad:  
Place salad mix in large bowl. On top of salad add onion, tomato slices, olives and peppers. Top with croutons and cheese.

To make dressing:
Mix all ingredients together in a shaker. Stir until well mixed. Mix the dressing through the salad or serve on the side for a lighter option.

We just got take-out from the Olive Garden on Monday night and I was so excited to have their salad with their special dressing. I can’t wait to try this recipe!
