What’s Cookin’ — Boston Market Meatloaf Recipe

I found this recipe for Boston Market Meatloaf in the Copycat.com’s Dining Out at Home Cookbook.  We love food from the Boston Market but since the one in our area closed, the nearest one is two hours away.  As an added bonus, this one is easy too! I made a few adaptions in quantity and ingredients but it is basically the same. I also adding a sprinkling of cheese to the top because everything is better with cheese!

Ingredients:
2 pounds lean ground chuck
3/4 cup minced onions
1 tablespoon minced garlic
1 cup diced tomatoes, drained (I used fresh tomatoes and added  1/2 teaspoon salt)
1 cup plain bread crumbs (I used whole wheat)
1 egg

Topping:
1/2 cup tomato sauce ( I added the spicy variety for more flavor)
2 tablespoons sugar

Directions:
Preheat the oven to 350 degrees F.  Mix the ground beef, onions, garlic, tomatoes, bread crumbs and egg until well blended. Place the mixture in a lightly greased 8″ by 4″ bread pan and bake for 45 minutes.  Remove the loaf from the oven and drain excess grease from pan.
Meanwhile, mix the tomato sauce and sugar together. Pour the topping over the meatloaf and put it back in the oven to finish baking,  which took about 15 minutes in my oven.
