Smores Parfait #recipe

by Pam on February 27, 2013

These parfaits come together quickly and taste like parfaits without all the fuss of having a campfire. Since they can be served chilled they’re great for a summer day.  I used Fat free, sugar free pudding in my recipe and couldn’t tell a difference in taste. We ate ours while they were still warm because we couldn’t wait!

Ingredients:
1 (3 ounce) box of Cook N Serve Chocolate pudding. (not instant)
2 cups milk
4 graham crackers, crushed
1 cup mini marshmallows
Whipped topping (like Rediwhip)
4 Hersheys kisses, optional

Mix pudding and milk in a microwave safe bowl. Cook for six minutes, stirring after every two minutes. In four parfait glasses (or small juice glass) layer 1 tablespoon pudding, followed by one crushed graham cracker. Add another tablespoon pudding and top with 1/4 cup mini marshmallows.  Top the marshmallows with another tablespoon of pudding. Important—do this while the pudding is hot so the marshmallows will melt.  Chill for ten minutes (or until ready to serve.) Top with whipped topping and add a Hershey’s kiss for garnish immediately before serving.
