What’s Cookin’- Whoopie Pies

Whats Cook'en
These are a classic addition to any cookie collection.  The cookies have a thick, creamy vanilla filling surrounded by two cake like cookies. For a different treat add peanut butter or melted chocolate to the filling. 

Ingredients for Cakes: 
1 1/2 cups sugar
1/2 cup butter
2 eggs
1/4 cup vegetable oil
2 tsp. vanilla extract
3 cups all purpose flour
1 cup unsweetened cocoa powder
1/2 cup chocolate chips, melted
1/2 teaspoon baking powder
3/4 tsp. baking soda
1/2 tsp. salt
1 1/2 cups milk

Ingredients for Filling:

1/3 cup  butter flavored shortening
1/4 cup butter
2 1/2 cups confectioners’ sugar
1 1/2 cups marshmallow creme
Dash salt
2 teaspoons vanilla extract
1/3 to 1/2 cup milk

Directions for pies:

Preheat oven to 350 degrees F.  Using an electric mixer, beat the sugar, butter, and eggs together until well combined, at least five minutes.. Add the oil and vanilla and beat again. In a separate bowl, combine all of the dry ingredients. Add half of the dry mixture to the egg mixture and beat until blended. Add 1 1/2 cups milk and beat again. Add the remaining dry mixture and beat until well mixed. Add the remaining 1 1/2 cups milk and melted chocolate chips. Beat until blended. With a large spoon, scoop out 24  circles of batter onto a baking sheet. Bake for 10 to 12 minutes. Let cool.

Directions for filling:
In the bowl of an electric mixer, combine all ingredients except the milk and beat well. Add just enough milk to achieve a creamy consistency. Spread filling across cooled cookie circles. Should make twelve pies.
