Spicy Spinach Pasta Sauce- Celebrate National Pasta Day with #Classico and a Giveaway!

Pasta is one of my kids’ favorite foods. I can’t recall all the times I’ve entered my house to find a bunch of teenagers sitting around my table eating pasta or seen the pasta that stuck to the wall in their futile attempts to see if it was properly cooked. If I ever find out who told them pasta that sticks to the wall is ready to eat, I will be sure to thank them.  Still, pasta is the one dish I know everyone in my family will enjoy.

While I was in New York for Blogher, I visited Little Italy and tried an amazing pasta creation.  I don’t remember the name of the dish, only that the waiter recommended it for me because I wanted something ‘adventurous’.  In honor of National Pasta Day, celebrated on October 17th, I decided to recreate the dish at home with help from Classico.

Ready for Pasta!

Because I am all about simplicity, I used the new Creamy Spinach and Parmesan sauce from the Classico Seasonal Selection as my base. Here’s what you need to make Spicy Spinach Pasta Sauce for your family.

Ingredients:
1 jar (24 ounces) Classico Creamy Spinach and Parmesan Pasta Sauce
1/2 cup chopped spinach
1 small green pepper, finely chopped
1 teaspoon minced garlic
1 large tomato, chopped
8 medium sized fresh basil leaves, minced
1 (16 ounce) package Fettuccine, cooked
1 tbsp. butter
grated cheese for topping, optional

Directions: 
Melt butter in medium sized skillet.  Add chopped spinach, green pepper, tomato, basil  and garlic. Cook until spinach is wilted and pepper is soft, around five minutes.  Stir in Classico pasta sauce and bring to a boil. Reduce heat to simmer. Allow to simmer five minutes to mix flavors.
Serve over pasta and topped with shredded cheese, if desired.
