I was challenged by Hodgson Mill to create an Ultimate Pizza. My family is equally divided on their pizza toppings. One half likes cheese only. The other half wants extreme meat. Could I develop a version that the entire family could consume? Probably not. However, I was not to be daunted! I foraged around the kitchen and created a pizza using my favorite ingredients because everyone knows if the cook is not happy, no one else is either!
1 package Hodgson Mill Active Dry Yeast
1 cup warm water
1 ½ cups each: Hodgson Mill Whole Wheat Graham Flour and Hodgson Mill Naturally White Flour
2 tsp. sugar
½ tsp. salt
2 Tbsp. olive oil
½ cup Greek Vinaigrette Salad Dressing
1 ½ cups shredded pork or chicken
4 medium tomatoes, chopped
1 of each: small green pepper, chopped, and small onion, chopped
¼ fresh basil, minced
½ parmesan cheese , finely grated
To Make Crust:
Combine whole wheat flour, 1 cup white flour, salt and sugar. Set aside. Mix yeast with warm water. Allow to set five minutes. Pour yeast/water mixture into flour mixture. Stir until combined. Add the last ½ cup of flour. Knead until smooth. Allow dough to rise for fifteen minutes. Press onto a pizza pan coated with cooking spray. Place in 350 degree oven. Bake until done, about fifteen minutes.
To Make Pizza:
Combine tomatoes, pepper, onion and basil into a bowl. Allow tomato mixture to drain to draw out as much water as possible. I also press my tomatoes between paper towels. The more water that is removed, the less soggy the crust. Add vinaigrette to tomato mixture and spread over crust. Top with pork or chicken and parmesan cheese. Bake in 350 oven until toppings are warm and the cheese is melted. Serve immediately.
