My secret confession of the day: I am not a morning person. Never have been, never will be. This puts a definite crimp in my husband’s breakfast schedule. He has an hour long commute each morning, so to be at his job on time at 7 AM, he gets up at 5:30. I am unable to eat at that beastly hour and I’m certainly not thrilled to be cooking. I tried. I really did. Sadly, it wasn’t meant to be. I’ve made breakfasts in advance and stored them in the freezer. This made it easy for him to grab one and pop it in the microwave. As our life became more complicated, I found that I didn’t always have time to make breakfasts in advance. When this happens, I pick up a box a Jimmy Dean Breakfast sandwiches and keep them in my freezer.

They’re convenient, taking about two minutes to heat in the microwave, and they come in eight different flavors. I’m partial to the Sausage, Egg and Cheese Croissant Sandwiches or the Maple Pancakes and Sausage Griddle cakes when served at a reasonable hour. Bryan is a biscuit fan. He’d gladly eat the Sausage, Egg and Cheese Biscuits or the Bacon, Egg and Cheese biscuits every morning. These sandwiches come in “Meal Size” packs of four. I think they’re huge and one definitely feels me up. Did I mention the convenience factor? That’s four days I don’t have to cook breakfast. Go me!

These breakfasts never last long around our house because the kids want to eat them too. I add a threatening, “Those are your father’s breakfasts!” (while possibly sneaking one of them). They are unfazed and tell me, “But I want one too! Remember, Mom, breakfast is the most important meal of the day! You don’t want us to do poorly in school, do you?” Sometimes children are too smart for their own good.

I LOVE their Sage fresh breakfast sausage, the one in the tube, which you cut into patties. OH yum… not only do we eat this in patty form, but I regularly use it to make sausage gravy for biscuits.
